Quinoa Energy Bars

These bars are perfect to pop in your lunch bag and have as a mid morning or afternoon snack. They contain clean ingredients and are a great alternative to the many high street bars out there. These bars will make you feel good from the inside and out and provide lasting energy.


  • 1 cup quinoa flakes
  • 1 cup whole almonds
  • 1 cup coconut flakes
  • 1 cup dried apricots
  • 1 cup raisins
  • 150g cacao nibs
  • 1/2 cup of coconut water
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1 tbsp. of melted coconut
1) Bake quinoa flakes, almonds and coconut flakes on a tray at 180C for 8-10min.
2) In a food processor add toasted almond mix and dried fruit and blend until combined.
3) Add coconut oil and water and blend until mix comes together.
4) Line  a 20x20cm square baking tray or a rectangular tray for slightly thinner bars and place in oven at 180C for 20 – 25min.
5) Once bars have cooled slice and store in an airtight container or freeze.
