Healthy Chia Seed Banana Pancakes

These pancakes are made using gluten free oats, ground almonds, chia seeds and ground flaxseed. Each pancake has a beautiful thick consistency and the addition of bananas adds just the right amount of sweetness. They are gluten, sugar and dairy free and can be enjoyed any time throughout the day.

Chia seeds are a great superfood with many health benefits including the ability to reverse inflammation, regulate cholesterol and lower blood pressure. Chia seeds are high in fibre, healthy fats and are a great source of plant based protein.

Don’t be afraid to get creative with your toppings. You can use anything from fresh berries, bananas, nuts, seeds, etc.

Makes approximately 12 pancakes

Ingredients:

  • 2 cups of gluten free oats
  • 1 cup plus 1/3 cup of ground almonds
  • 2 cups of water
  • 1/2 cup of ground flaxseed
  • 2 ripe bananas
  • 4 tablespoons of pure maple syrup (raw honey or agave nectar)
  • 2 tablespoons of chia seeds
  • A pinch of sea salt
  • Coconut oil for cooking

For the topping:

  • 1-2 bananas
  • 2 cups of blueberries
  • 2 cups of slices strawberries
  • 2 tablespoons of chia seeds
  • 1 cup of maple syrup

Method:

  1. First gluten free oats into a food processor, blend until a smooth flour is formed.
  2. Cut bananas into pieces and add them into the processor with the remaining ingredients. Blend until mixture is a thick consisitency and not runny.
  3. Transfer the mix out of the food processor and into a mixing bowl or remove the blades from processor so it it easier to get the mixture out using a spoon.
  4. Heat a saucepan until hot then add a teaspoon of coconut oil to the pan and allow it to melt.
  5. Once the oil has melted, use a tablespoon to help measure out the pancake mix. Use about a tablespoon and a half of the mix per pancake and the spoon to help shape your pancakes.
  6. Monitor pancakes and after about a mintue check to see if they are ready to be flipped. Once flipped allow the other side to cook through and remove cooked pancakes onto a plate. Repeat the process adding coconut oil to the saucepan to avoid sticking. Depending on the size of your pancakes you should get approximately 12 medium sized pancakes.
  7. Once you have finished making pancakes, stack as many as you like per serving and add the toppings.
