These coconut bars are quick and easy to whip up and don’t have any complicated ingredients. I’m loving everything coconut at the moment and came up with these beauties as a snack to pop in my bag to help avoid buying the pre-packaged varieties out there. There are so many ready made bars on the market that aren’t always as healthy as they seem and can often be pricy.
The coconut bars are a lovely blend of cashews, dates, coconut and have just the right amount of sweetness to satisfy cravings. The cacao powder is full of antioxidants and is a known mood booster so these bars will have you feeling good on the inside and out.
This recipe makes approximately 8 bars and they can be stored in the fridge for two weeks or the freezer for up to two months.
- 1 cup of coconut flakes
- 1/2 cup cashew nuts
- 1/2 cup of dates (if your are using dried dates, soak for at least 1 hour)
- 1/4 cup of dark chocolate chips
- 1/4 cup of raw cacao powder
- 1/3 cup of raisins
- 2 tbsp. of chia seeds
- 1 tbsp. agave nectar
- pinch of salt
Blend cashews, chia seeds, raw cacao powder and salt until you achieve a flour like consistency.
Add dates, raisins and agave nectar to the processor and blend to a doughy texture.
Line a square baking tray and press mixture into tray.
Place tray in fridge to set for 3-5 hours or overnight and then cut into bars.
Individual bars can be stored in an air tight container in the fridge or pop into the freezer for up to two months.
